Until recently, kale has been the superstar vegetable with numerous salad, smoothie and even kale chip recipes. And there’s great reason to spotlight this leafy green, take note of it’s outstanding nutrition, and make sure it stays on the menu. Yet, food trends for this year are redirecting the spotlight to the wonderfully versatile and nutritious vegetable, cauliflower.
Cauliflower is part of the cruciferous family of vegetables that includes broccoli, Brussels sprouts, and bok choy. Cruciferous vegetables contain glucosinolates, that when broken down form active compounds that have many anti-inflammation and anti-cancer properties. Good stuff!
We became hooked on using more cauliflower when we were introduced to mashed cauliflower (an alternative to mashed potatoes), cauliflower “rice,” and cauliflower pizza crust. We love that chefs have discovered how to use this vegetable as alternatives to potatoes, rice, and grain because this allows us to increase our daily amount of veggies, manage our starches and grains, and enjoy more healthy snacks.
